- The books and any nice ephemera from any of Prunier's establishments in London or Paris are un-surprisingly, much sought after. Not only did Mme Prunier have a loyal customer base, but also nurtured a very loyal staff, in no small part due to Mme Prunier's own sense of loyalty to long serving, hard working and skilled members of the Prunier Brigade. She was also an outstanding manager of people and very good at getting them to work to a very high standard that was wholly brought about by her own high standards and her constant daily focus on achieving them. She kept a daily register of guests likes and dislikes and consulted this book constantly. If one reads the other Prunier book she wrote; 'La Maison', one is given a glimpse of a true and skilled restauranteur at work overseeing the many daily tasks, any one of which, if forgotten can lose a customer, cause unwanted negative gossip and ultimately affect profits and the very health of a business with a high reputation. This book reveals the recipes of this famous fish restaurant that was at its peak before, during and after WW11. The dedication letter in the book by Escoffier is a testament to the regard in which the other famed professionals held Mme Prunier and her outstandingly grand establishment.

- The frontis and extra title page are very bright and colourful, The overall condition of this lovely little book is excellent, thus the reason for the clam-shell box. The BL holds one copy and dates it circa 1866. Perhaps due in part to the smallness and relative delicacy of this little tome they are very rare. They would not have been securely housed on a book-shelf with other books but rather odd places like drawers or forgotten paper piles to be discarded unintentionally, or treated more roughly than a larger book. Where ever this copy has been it was not used nor disturbed very much. A little gem.

FIRST EDITION. 172 X 113MM. 2p Highly decorated inside front cover and Title page. Verso has an intriguing etching of the Liebig Factory, Frey Bentos, Uruguay. 1-111 Index. iv Advertisement page. v-vii Introduction. viii Preface. 1p Recipes. [1] 1-104. Highly decorated inside back cover. Beautifully decorated and colourful boards sometime expertly relaid. Spine is relaid crimson cloth. Inside very clean with slight foxing on the title page. The guttering has been strenghtened with a light foxing not affecting the text. Overall a very good complete copy of a very scarce company booklet that is rarely found in such good condition.
- The Liebig Extract of Meat Company (Lemco) was the originator of Liebig and Oxo meat extracts and later, Oxo beef stock cubes. Baron Justin von Liebig invented a way to preserve the flavour of meat in the form of an extract. In the 1860's the Baron, known as a very active organic chemist was invited to be a shareholder in a Uruguayan firm to produce a meat extract and transport the liquid in tons to Europe. (with no debris of skin, bones nor meat) The promising lucrative plan appealed to the Baron so the company was established in December 4th 1865 in London. The factory was based at Fray Bentos at Villa Independencia, on the river Uruguay, where fresh air and an unlimited supply of water were an indispensable necessity for the slaughter of 1,500 four year old oxen daily during the seven months of the slaughter season. The company employed about 1000 hands, and with wives and children supported a community of around 3000.

Escoffier.   Georges Auguste     - With Escoffier's menu, booklet and ephemera.
The Carlton Hotel
One of Escoffier's Menus as well as a booklet with recipes for His sauces and two of Eugene Herbodeau's menus plus other Carlton Hotel Ephemera.
The Carlton Restaurant 'Carte du Jour' menu is dated 29th Avril 1908. It is slightly age-browned with ink inscriptions at the top describing some new dishes not featured on the menu. There are 2 dinner menu's from 4 Carlton Gardens dated 15 and 31st March, without a yearly date. Then two of Eugene Herbodeau's menus, the first for Xmas Dinner and a separate blue invitation card to New Years Reveillon. The second menu is a very rare special Luncheon with Anna Pavlova as main guest. Also enclosed is a recipe booklet with the original blue covers almost detached. It has Escoffier's name and the Carlton Hotel 'coat of arms' embossed in slightly faded gilt on the front cover. It is titled 'A Few Recipes'. It has a title page. p 1 Introduction. p 3-7 Preface. p 8-40 Recipes. p 41-42 Advertisements for Escoffier Sauces. p 43-44 Advertisement for 'A Guide to Modern Cookery'. p 45-47 Index. [1] There is a blue water stain in the top corner of all pages, not affecting the text. Also a finely designed folded card advertising the 25th Anniversary of the Carlton Hotel, very beautifully decorated in silver with blue leaves and a border of fruit; It has three finely drawn vignettes of the Hotel, the Restaurant and the Palm Room. Also enclosed is a b/w photograph of Escoffier and Eugene Herbodeau and another b/w photograph of the Carlton Hotel, circa 1910. All housed in an specially made clam-shell box bound in half mid-tan calf with tan cloth boards. The spine with raised bands and gilt lettering.
- Auguste Escoffier's tenure at the Carlton lasted from 1899 - 1819. His Carte du Jour menu is dated 1908. The two menus from 4 Carlton Gardens, which was the residence of Lord Balfour (Ex-Prime Minister) are believed to be Escoffier's. This cannot be proven, but the menus were a part of a large amount of purely Escoffier ephemera that this compiler purchased. The recipe booklet and four page advertisement sheet features products and recipes promoting 'Escoffier's Sauces' that were produced and sold by his company - 'Escoffier (1907) Ltd' at 6 Ridgemont Street, Tottenham Court Road, London. Mons. Eugene Herbodeau was a one-time protege of Escoffier's and also his literary executor. Together with Paul Thalamas he wrote and published a history and biography of his great mentor. He was commis Chef Poissonier under Escoffier at the Carlton in 1913. He also became Chef de Cuisine at the Carlton Hotel after Escoffier retired in 1819. In the black and white photograph, Escoffier is quite old and in civilian clothes. Herbodeau is in a Chefs uniform. As Escoffier passed away in 1935 we can assume this photograph was taken at the Carlton Hotel sometime before his death. An interesting footnote to Escoffier’s time at the Carlton, concerns the future President of North Vietnam, Ho Chi Minh [HCM]. Before becoming President he worked in the hotel kitchens from 1913 to 1917. He was waiting quietly in London for events to unfold, secretly hoping the conflict in the colonial regime in Indochina would lead to its collapse. When HCM started his job in the spring of 1913, he was part of the kitchen washing and cleaning team. For the staff, it was not unusual to see wealthy and famous clients leaving a lot of food on their plates after their meals. Whenever HCM saw a large chunk of beefsteak or a large piece of chicken untouched, he would transfer them to a clean plate and send them back to the kitchen. One time Escoffier asked HCM, “Why didn’t you throw these into the bins like others do?” HCM answered, “These things shouldn’t be thrown away. You could give them to the poor.” Escoffier was amused and pleased, “My dear young friend, please listen to me! Leave your revolutionary ideas aside for now, and I will teach you the art of cooking, which will bring you a lot of money. Do you agree?” Shortly after this conversation, HCM was promoted to the pastry and cake section, and Escoffier taught him the art of fine French desserts. He followed the grand chef’s instructions diligently, and with a keen interest. On French pastries, especially the pâte brisé, HCM mastered the skill very quickly. Escoffier had pioneered the techniques on how to mix the ingredients, how to handle the dough, and the key steps in the baking process that would produce a light, fluffy, and crispy crust. From the beginning, HCM’s mentor had noticed his unusual intelligence, and he always appreciated HCMs thoughtfulness and polite manners. Escoffier had no doubt that HCM (one of his favourite chefs) could have had a promising career ahead of him in the world of French haute cuisine. The Carlton Hotel was in its time one of, if not the most famous hotel in the world. Unfortunately it existed for only forty years. It opened in 1899 and was completely destroyed by Nazi Germany during the London Blitz in early 1940, after 57 consecutive nights of air raids ordered by Hitler. Any ephemera and menus from Escoffier's and Herbodeau's time working there are extremely scarce, and to have this varied and unique collection is quite rare.

- Gordon Ramsay, a one time commis chef and protege of Marco Pierre White. He earned his own three Michelin stars at his restaurant on Royal Hospital Rd, Chelsea, London. (Previously on the same site, the restaurant 'La Tante Claire' under Pierre Koffman also had three Michelin stars). Ramsay has also been awarded seven other Michelin stars for his restaurants at Claridge's, The Connaught, Petrus at the Berkley Hotel, Maze and the Savoy Grill. He has since opened other establishments around the globe. The book is a very handsome production set out in the modern classic format featuring fifty of Ramsay's classic (his description) dishes all highlighted by beautiful full page photographs and very detailed recipes. As intended, this gives an insight into the standards required to gain and maintain three Michelin stars. Visually impressive, one's taste buds tingle with the assumption the smells and taste are just as good. A must for any serious modern cookery book collection. Must rank alongside the other literary efforts of Blumenthal, Adria, Robuchon, the Roux Brothers, Koffmann, Stein, Ducasse et al.

- This copy of the second edition is a well-used one still retaining it's originality. All the pages prefacing the main text are slightly bronwed with ragged edges. but no loss. It is quite scarce and should still be treasured. It is one of the cornerstones of a collection of English cookery texts. It broke the publishing mold of the time, because of Isabella Beeton's focused effort and vision. Also the full backing of her loving husband and publisher who was crucial to the enormous success of this book.

Surprisingly bound in the original manner of the first edition-first issue with the original navy blue cloth with 1/4 navy blue calf. Gilt stamped on the front cover and gilt writing on the spine with original blind tooling. The spine has been sometime expertly re-laid without loss. Also the book is slightly thicker than the previous three issues of the 1st edition due to a thicker paper being used. Very clean internally. A nice copy of the very scarce, dated, fourth edition, usually found incomplete.
- There is almost no difference in the text, page by page, recipe by recipe in the collation of the 1st, 2nd & 3rd issues of the first editions except the Errata on p.vi is not present in this issue, but is on the preceding three issues. Another small difference is item nos. 2745 and 2751 of the Legal Memorandam of the 1st and 2nd issues are different in the 3rd and 4th issues. The other difference is the plates in this issue have the same content as the other preceding two first issues but have a different floral border and are of a higher quality. Isabella Beeton who had sound business acumen issued the 3rd and 4th editions using the leftovers from the first two issues. This explains why there is no unique frontispieces from the 1st and 2nd issues present here, but rather has the plate from p113 instead, even though the list of Coloured Plates on p.xxxix states the plate should face p.113. One assumes Isabella and Samuel ran out of plates completely, as this is the last one of the four first issues with the original plates, before publication of the new and very different ones of the revised and corrected second edition of 1869. This is a unique book and is the last edition Isabella Beeton would issue before her untimely death on February 5th, 1865.

- This copy is quite different in appearance to the previous four issues of the first edition. Although also having 12 plates, they are very different, and in the book all available space is filled with advertisements, (an unbelievable 5 pages at the front and 45 pages at the back) giving a clue to the aggressive marketing by Ward, Lock & Tyler who knew full well the popularity of Isabella's literary legacy. By 1890 over half a million copies of 'The Book of Household Management' had been sold with no sign of demand abating, assuring its reputation as the publishing phenomenon of the nineteenth century. One assumes Isabella and Samuel ran out of the original plates completely, before this publication of the new and very different corrected second edition of 1869.

- A precursor organisation, the College of Antiquaries, was founded circa 1586, and functioned largely as a debating society until it was forbidden to do so by King James I in 1614. The first informal meeting of the modern Society of Antiquaries occurred at the Bear Tavern on The Strand on 5 December 1707. This early group sought a charter from Queen Anne for the study of British antiquities; its projected ventures included a series of 35 books to be issued. The formalisation of proceedings occurred in 1717 with the first minutes at the Mitre Tavern, Fleet Street, dated 1 January 1718. Those attending these meetings examined objects, gave talks, and discussed theories of historical sites. Reports on the dilapidation of significant buildings were also produced. The society was also concerned with the topics of heraldry, genealogy, and historical documents. In 1751, a successful application for a charter of incorporation was sought and granted. The society began to gather large collections of manuscripts, paintings, and artefacts. The acquisition of a large group of important paintings in 1828 preceded the establishment of the National Portrait Gallery by some 30 years. During the reign of Henry V111 a new set of rules were passed in 1526 which are now known as the Ordinances of Eltham and presented in public as a serious attempt to reform the Tudor Court. They set out in detail how the court should be organised and run. In particular, they attempt to prevent members of the court and its servants from profiting from their positions. The Ordinances even attempt to control what happens to the remnant of spent candles as a way of ensuring control of expenditure on the court. They also make a point of seeking to exclude specific groups from the court, including cripples, beggars and boys. Also recorded is the diet of Henry VIII and his courtiers. With up to 1000 people attending the monarch. All aspects of life had to be strictly controlled, these included making provision about who could enter the King's bed chamber to who could keep dogs and when you could play cards. These rules were published in a series of ordinances and regulations, covering pages 137-241 and onwards. Amongst the incredibly detailed instructions are also accounts of what was eaten each day by the King and different levels of courtiers. As can be seen from these extracts, bread formed a major part of the diet of the highest and lowliest members of the court.

- Ward, Lock & Tyler took over the second edition of 1869 from Samuel Beeton. They knew full well the popularity of Isabella's literary legacy. By 1890 over half a million copies of Beeton's 'The Book of Household Management' had sold with no sign of demand abating, assuring its reputation as the publishing phenomenon of the nineteenth century. From the quintessential Englishness of the early editions, this edition has grown quite universal, with added recipes for French, German, Italian, American, Australian, and Indian Cookery. Also Messrs. Tyler has been dropped from the company name and it is now the famous company 'Ward Lock'. This 1888 volume, considerably thicker than any 'Beeton' published before, is the first of the commonly called 'Big Beetons'. At nearly 3 inches thick it is 3/4 inch thicker than the 1869 edition. As with the second edition, it is also packed with advertisements. One wonders what Isabella, if she had still been alive, would have made of this very different volume from those of the 4 issues of the 1861 first edition that she herself had revised. Never the less, a very handsome copy of a cookery book of continuous interest and high reputation.
