Beautifully fresh, red, black and gilt embossed and tooled spine and front board. Blind tooled red cloth back board. Very clean inside. A very handsome copy of the scarce second edition in the original state, almost as new.
- Henry Southgate, anthologist, born in 1818, a native of London, entered his father's business, and from 1840 to 1866 carried on his practice as an auctioneer of prints and engravings at 22 Fleet Street. The firm was known as Southgate & Barrett until about 1860 (when the partnership was dissolved), after which Southgate became gradually more involved. In the meantime he had made a considerable reputation as a compiler of selections in prose and verse from English classics. He moved about 1870 to South Devon, where he resided at Salcombe, and afterwards at Sidmouth; thence he moved to Ramsgate, where he died on 5 Dec. 1888. This second edition in the unusual red cover is just as scarce as the first of 1874 especially in this immaculate condition. Other copies and editions are not so scarce.

- Elizabeth 'Eliza' Acton, an English poet and cook, produced and aimed this book at the domestic reader rather than the professional cook or chef. Elizabeth David rated it one of the best written nineteenth century cookery books. It also has numerous fine illustrations throughout the text. Although it is a rather late edition (the first was printed - 1845) it is none the less a very desirable copy due to the very clean original condition.

- Escoffier, (1846-1935) was not only a great and famous chef, but a little known fact was that he was also a relentless innovator, as can be seen by the large range of sauces, soups, pickles, consomme, vinegars etc (even the famous Sauce Melba) featured in the 4 page pamphlet of Escoffier Sauces. This came about because of his laudable belief that making life and kitchen tasks easier for the professional and the home cooks was an inevitable need and necessity, which he understood and very clearly stated in his great cookery classic 'Le Guide Culinaire'. Reading the preface of this great book we can see the practical, as well as his heartfelt understanding of people's constant desire for change was an ongoing negative human condition thro' the ages. Escoffier tried to explain that the secret to alleviating this restless innovation, will come about by cooking the timeless classics as well as possible, instead of the constant search for novelty. Probably the most lasting but least known food item that he developed and started producing on a large commercial scale, was tinned tomatoes. The other two rare booklets also pre-date a very modern trend of promoting processed food items aimed at the home cook. The autobiographical booklet is fascinating as a condensed look at Escoffier's life put together by the Escoffier foundation at 3, rue Auguste Escoffier. 06270 Villeneuve-Loubet Village and it's Chairman, Michel Escoffier, the great man's grandson. An unusual collection.

- This excellent book was the Roux Brothers first published literary effort. It was very well received and went on to cover demand with a total of 4 editions. Next came in 1986, another of Albert's equally fine titles 'The Roux Brothers on Patisserie' that also required another edition later. Next we see in 1988, with a total of 3 editions, "At Home with the Roux Brothers'. Followed one year later in 1989, 'The Roux Brothers. French Country Cooking'. Albert Roux followed quickly in 1991 with 'The Roux Brothers Cooking for Two', printed after a run of 13 cooking programmes on the BBC. This had a total of 2 editions. !992 saw 'French Country Cooking' published with a total of 2 editions. 1996 saw Albert bring out, 'Cher Albert: Answers to everything Gastronomique'. Michel Roux brought out his own Master tome in 1994, titled 'Desserts'. A immense output from two of the most important modern Master Chefs to reside and work in England. Along with Escoffier and Elizabeth David, the Brothers were, in Culinary terms, epoch changers in the United Kingdom.

Internally very clean however some slight foxing on fep before title page and on frontispiece. A very good copy of a fairly scarce book.
- The illustrations are: The frontis drawn by Emma Soyer and engraved in steel by H.B. Hall and fifeteen wood engraved plates, two folding, including six plates illustrating elaborate dishes, and others showing the famous drawing of the Reform Club Kitchen, a table of a weathy family, Soyer's table at home, a drawing of two Bavarians by Emma Soyer and a self-portrait of Emma Soyer engraved in steel by H.B. Hall. There is also a folding plate on blue paper that is one of Soyer’s menus for a very special banquet at the Reform Club on July 3rd 1846 for 150 couverts that included the guest of honour - His Highness Ibrahim Pasha. It consisted of a massive 46 courses and on a spit in the dining room was a huge roasting Baron of Beef ala Anglaise. The dinner was a highlight of the Amir’s London visit. Four months earlier on March 22nd 1846, Ibrahim Pasha - His Highness, The Amir of Trans-Jordan came to London to sign a treaty with His Majesty The King in respect of the United Kingdom recognising the status of Trans- Jordan as a sovereign independent State. The menu was not in the first edition of 1846 but was in subsequent editions including this one here.

[1] vii-xii Epistle Dedicatory. xiii-xix+(1)1-588. (Strangely the pagination has the page numbering starting in the middle of the dedication to the Reader). Has little engravings of fish in the text. Bound in the publishers original clean full limp dark fawn crushed morocco with gilt lettering on spine and front cover. All housed in a full brown calf clam-shell box with gilt lines on the boards. Spine has raised bands with gilt lines and green and red labels with gilt lettering. Inside the clam-shell box is lined with red felt. Internally the book is very clean. A handsome little item. Extremely scarce.
- An Oxford University Press, Miniature Edition. There is no date, but on the verso of the decorative title, it states: from "the fifth edition, much corrected and enlarged". The fifth edition, published in 1676, was the last which Walton himself corrected. This little volume was probably published - circa 1900. Walton’s famous treatise on fishing was printed five times in the seventeenth century. It was first published in May of 1653 with an engraved title-page and engravings of six fishes in the text. The second edition of 1655 contains many alterations and additions to the text, the number of pages being increased from 246 to 355, and the number of chapters from 13 to 21. Seven commendatory poems were prefixed. Four engravings of fishes were added. The third edition was printed in 1661 and re-issued in 1664, with a new title-page. A commendatory poem by Brome previously printed is omitted, and there are a few alterations in the text. The most significant additions are the "Postscript touching the Lawes of Angling" and the Index. The fourth edition was printed in 1668 and closely followed the third in content. The fifth edition, printed in 1676, introduced further changes. The text was revised and considerable additions were made, the length of the text being increased by 20 pages. The copper-plates were re-engraved. Altogether, 'The Compleat Angler' was reprinted 10 times in the eighteenth century, about 117 times in the nineteenth century, and between 30 and 40 times in the twentieth century. Of a single edition published by Cassell & Co. in 1886, 80,000 copies had been sold by 1914. The text of the fifth edition, 1676, has usually been followed in the subsequent printings. A hugely successful book over the centuries that has few rivals.

The Title page has a planche of handmade paper tipped in with Ramsay's signature on it, also an ink inscription indicating a Xmas present. A full white glossy cover with silver writing on the spine. With a white d/w with silver writing on cover and spine. Housed in a silvery grey coloured slip-case with white writing. Condition as new.
- Gordon Ramsay, a one time commis chef and protege of Marco Pierre White. He earned his own three Michelin stars at his restaurant on Royal Hospital Rd, Chelsea, London. (Previously on the same site, the restaurant 'La Tante Claire' under Pierre Koffman also had three Michelin stars). Ramsay has also been awarded seven other Michelin stars for his restaurants at Claridge's, The Connaught, Petrus at the Berkley Hotel, Maze and the Savoy Grill. He has since opened other establishments around the globe. The book is a very handsome production set out in the modern classic format featuring fifty of Ramsay's classic (his description) dishes all highlighted by beautiful full page photographs and very detailed recipes. As intended, this gives an insight into the standards required to gain and maintain three Michelin stars. Visually impressive, one's taste buds tingle with the assumption the smells and taste are just as good. A must for any serious modern cookery book collection. Must rank alongside the other literary efforts of Blumenthal, Adria, Robuchon, the Roux Brothers, Koffmann, Stein, Ducasse et al.

- Dubois spent much of his career as chef to Prince Orloff of Russia and Emperor Wilhelm of Prussia and greatly influenced the courts and great houses of Europe. All of his books are very nicely decorated with fine engravings. This one is no exception. A handsome copy.
