Contemporary dark brown calf spine with blue marbled boards and calf tips. Spine with raised bands, gilt lines and red gilt label. Externally very slightly rubbed but overall in excellent condition.
- The outstanding full page engraved plates chronicle the methods, equipment and final product of the Miller, Pasta maker and Baker. The book is full of precise instructions pertaining to the three trades, particularly the Baker. It details everything from the quality and storage of the wheat berries to the methods of stone grinding, to the oven construction and equipment used for processing and baking. In an article online called 'The Pristine Loaf' by Hildegard Pickles, there is a chapter detailing the changeover to Yeast. Sour-dough had remained for centuries the only leavening agent for bread making. This was also the case in France, where it represented the sole raising agent, except for cake making purposes for which brewer's yeast was used until pressed yeast replaced it. In the 17th century a fundamental change took place that is chronicled by Malouin in this book. When the changeover to yeast occurred, there was a protest, as the Medical Faculty in Paris did not approve. A resolution taken by them on 24 March 1668 resulted in no majority gained for the use of yeast alone, and only after a further resolution was made by the French parliament on 21 March 1670 were bakers allowed to use yeast. The resolution also demanded that it must be fresh and obtained from a Parisian brewery, and that it should also be mixed with sour-dough. (A typical political decsion trying to appease 3 trades at once and ending up with a mish-mash of a raising agent). The yeast in those days was obviously different and the process was changing and evolving over time. Bakers could no longer rely on the same product and had to evolve as well. One wonders how consistent the loaves were. It must have been a frustrating time for the them individually and as a trade. The beautiful and impressive plates are sometimes found at auction and fetch on their own, silly money. In the complete state with a full compliment of plates, a very rare, fascinating and handsome book.

- A major French-language compendium of eighteenth century information on domestic management that was widely read in Europe and later had important influence on the development of encyclopedic resources in early nineteenth century Japan. The dictionary, compiled by a French priest, ran to several editions in continental Europe but only three editions in English; this London copy and two later Dublin editions. Some nice woodcuts throughout the text expand the topics covered; these include agriculture, beekeeping, bird-traps, garden design, heraldic devices etc. Other sections include Baking, Bread-making, Sweet-making and Dessert with three woodcuts showing how to lay oval and round dessert tables plus a table ready-laid. This edition was not only translated from the work by M. Chomell but also Anglicised by Mr Bradley. A fascinating glimpse of some of the skills-for-living used in the first half of the eighteenth century.

- Although precise details of his birth and formative years are hard to find, it is well recorded that Nathan Bailey was an English philologist and lexicographer. He was the author of several dictionaries. He was a Seventh Day Baptist, admitted 1691 to a congregation in Whitechapel, London. Later he had a school at Stepney. Bailey, with John Kersey the younger, was a pioneer of English lexicography, and changed the scope of dictionaries to a greater comprehensivity. Up to the early eighteenth century, English dictionaries had generally focused on "hard words" and their explanation, for example those of Thomas Blount and Edward Phillips in the generation before. With a change of attention, to include more commonplace words and those not of direct interest to scholars, the number of headwords in English dictionaries increased spectacularly. Innovations were in the areas of common words, dialect, technical terms, and vulgarities. Bailey's An Universal Etymological English Dictionary, from its publication in 1721, became the most popular English dictionary of the 18th century, and went through nearly thirty editions. It was also the basis of English-German dictionaries. This copy here of Bailey's 'Dictionarium Domesticum,' 1736, is also a cookbook with recipes, including a rare one for fried chicken. The alphabetical ordering of the book is unusual, and the recipes are much more detailed than is the norm in other cookery books of the time. This gives it a greater importance than some of the other well-known 18th century cookery books. Nathan Bailey died June 27th, 1742, six years after Dictionarium Domesticum's publication.

- With gratitude I must thank Uta Schumacher-Voelker for clarifying the bibliographic details of this book. Until she helped me it had been very hard to get any precise information. She informs that this little book has the tendency to fool booksellers and collectors alike, because it closely resembles some of the editions of Mrs. Rundell's New System of Cookery in size and binding-style. Uta then elaborates very precisely that it is the last of four clearly distinguishable editions of the same book. The first edition is actually dated 1847 (Derby: Thomas Richardson and Son) Then follows at least three editions, all undated but with different imprints: #2. Derby: Thomas Richardson and Son, 172 Fleet St., London and 9, Capel St., Dublin [nd]. This imprint was issued before 1857, when the imprint changed to #3. Richardson & Son, 147 Strand; 9, Capel St., Dublin, where, according to records, they had their business only until 1860. #4. My imprint, here with the Paternoster Row address issued between 1861-79, but Uta estimates the date of publishing is closer to 1861 than 1879.

- Nothing seems to be known about Hazlemore. Cagle proclaims p530.- 'This is a word for word reprint of Mary Cole's 'Lady's Complete Guide, or Cookery in all its Branches' London 1791. Oxford states on p122 exactly the same thing and wonders who the author may be. I have a copy of Cole. (see item ref: 11302 on this site) I made a comparison and after reading the notes of Mary Cole's cookery book I am struck however, by the very unusual and honest habit of Hazlemore's, to attribute and note the names of previously published authors he used, against each of his receipts. This then leads me, as a chef myself, to state my own observation, that an extremely small amount of dishes and recipes, if any at all, are original. All dishes cooked are the sum of the cook's experience of recipes already existing. If the cook has a streak of innovation, and most do, then they will possibly enhance those learned recipes. Sometimes when the cook is very good, the dishes he or she cooks are exceptional and quite different and bear only a passing nod to the fundamentals of the original. The dishes cooked today by great chefs can still be ascertained in the recipes in this and other antiquarian cookery books, and this in turn reinforces a universal truism, that everything changes but ultimately remain the same.

- If you look at Item Ref: 11279 on this site, you can see the four volumes of Cassell's company produced books about the 'Household' with no authorship attributed. This is also the case when you peruse these three volumes here published by William S. Orr's publishing house. It's obvious both are typical of a Victorian printed genre aimed at a burgeoning middle-class due to the huge ramp-up of the British industrial revolution. The big difference is that these Orr produced volumes are full of all manner of things that the Victorian husband and wife would need, but without illustrations nor colour plates to enrich the production, whereas the Cassell books are heavily illustrated with chromolithograph colour plates and practical black and white vignettes. The Cassell production was a direct response to the famous O.S. Beeton and Ward Lock publishing phenomenon of Isabella Beeton's 'Household Management'. But Beeton's book itself was a direct response to this type of earlier book here. One of the other big differences besides the gaps in years, between all three household books is that Beeton's is attributed to Isabella and not just a company. William S. Orr was a publishers' agent from the 1830s, and was a close associate of Robert and William Chambers, (the other publisher named in these six volumes). He printed a London edition of 'Chambers's Edinburgh Journal' by mid-1832. The arrangement used stereotype plates, and brought the circulation up to 50,000. He published these volumes of 'Household Economy' in 1936. By 1845 the overall circulation was declining from its peak, and Orr wrote to Chambers explaining that the market was changing. In 1846 Chambers terminated the arrangement with Orr. Punch magazine, set up in 1841, brought in Orr to help with distribution to booksellers and news agents. Orr died in 1873. Whatever the publishing merits or not of these books, they are fascinating pragmatic advice for everything needed to be known about the setting up of a comfortable Victorian home.

- Annabella Plumtree was the daughter of Robert Plumptre (1723–1788) who was an English churchman and academic and President of Queens' College, Cambridge from 1760. Annabella had a sister; the author Anne Plumptre and a brother; the dramatist James Plumptre. Annabella’s book is a treatise on diet with many paragraphs called ‘Observations’ after recipes. These observations give healthful hints and advice, particularly for children. A thoughtful and unusual cookery book. Cagle has the second edition of 1813. Axford, Bitting, Oxfrod and Vicaire all record the first edition. Apparently an 1813 issue exits, but un-recorded in the bibliographies. Cagle informs that Watt attributes this work to Annabella Plumtre. Oxford mis-cites Watts and gives the author’s name as Arabella, a mistake that Bitting repeats. The NUC has a cross reference from Bell Plumtre to Annabella Plumtre.

- Annabella Plumtree was the daughter of Robert Plumptree (1723–1788) who was an English churchman and academic and President of Queens' College, Cambridge from 1760. Annabella had a sister; the author Anne Plumptree and a brother; the dramatist James Plumptree. Annabella’s book is a treatise on diet with many paragraphs called ‘Observations’ after recipes. These observations give healthful hints and advice, particularly for children. A thoughtful and unusual cookery book. Even with the fine facsimiles pages this is a very scarce book. Cagle has the second edition of 1813. Axford, Bitting, Oxfrod and Vicaire all record the first edition. There is some dispute about the spelling of Plumtree's name. The NUC cite it as 'Plumtre'.

A 1995 reprint in miniature of the 1st edition, 2nd issue of 1721 [see item 10966 below]. Text block - 2 1/4" x 3 3/4" Full brown speckled calf binding, with raised bands on spine with gilt lines and brown label with gilt lettering. Binding measuring 2 1/2" x 4" -- Pp. Engraved portrait frontispiece by Robert Shephard. Title page, 41 leaves with the engraved text on rectos only with versos blank. Last two leaves with 'The Order for Bills of Fare' and the Index. A beautiful and unique miniature edition.
- The portrait of Kidder is 'un-wigged', showing his natural hair. Later editions have Kidder with wig, and also have eight engraved plates. This edition does not have the plates but is complete. This is verified in the joint study published in PPC, Vols #'s 32 & 39 by Peter Targett in UK and Simon Varey in US. Kidder issued the recipes to his students one by one, in line with the daily and weekly lectures. The plates were issued later when he moved his schools to other locations. This is why the pagination of Kidder's books present so many variances. Hence Targett and Varey's welcome and helpful research. A beautiful and desirable item. One of a limited edition of 300. (Actually only 5 have been printed to date (19.3.23) with no plans to produce any more. Making this copy extremely rare.
